Fried chicken with yuzu sauce
Ingredients for fried chicken sauce
- Chicken drumsticks 300g
- All-purpose crispy flour, Jade Leaf brand 100g, plus extra
- Cold water 120g
- Black pepper 15g
- Oil for frying
Ingredients for yuzu sauce- Potato starch, Jade Leaf brand 15g
- Water 70g
- Monin Yuzu 80g
- Granulated sugar 40g
- Salt 3g
Methods1. Combine All-Purpose crispy flour, Jade Leaf brand with cold water.
2. Beat to combine and rest for 30 minutes.
3. Heat oil in a pan to 170C. Dip the drumsticks in the batter above, then coat with extra all-purpose crispy flour.
4. Fry until the surface turns golden about 7-9 minutes. Remove from the pan.
5. Drain the oil, then ready to serve.
