Fried chicken with yuzu sauce


Ingredients for fried chicken sauce

  • Chicken drumsticks 300g
  • All-purpose crispy flour, Jade Leaf brand 100g, plus extra
  • Cold water 120g
  • Black pepper 15g
  • Oil for frying 
Ingredients for yuzu sauce
  • Potato starch, Jade Leaf brand 15g
  • Water 70g
  • Monin Yuzu 80g
  • Granulated sugar 40g
  • Salt 3g
Methods
1. Combine All-Purpose crispy flour, Jade Leaf brand with cold water.
2. Beat to combine and rest for 30 minutes.
3. Heat oil in a pan to 170C.  Dip the drumsticks in the batter above, then coat with extra all-purpose crispy flour.
4. Fry until the surface turns golden about 7-9 minutes.  Remove from the pan.
5. Drain the oil, then ready to serve.
