Thai Coconut (Ba bin) waffle
Ingredients
· Glutinous rice flour, Jade Leaf brand 230g
· Tapioca starch, Jade Leaf brand 60g
· Icing sugar, Jade Leaf brand 150g
· Coconut milk 350g
· Salt 5g
· Coconut flesh, julienne cut 300g
· Purple yam powder 5g
Methods
1. Combine glutinous rice flour, tapioca starch, icing sugar, and salt together.
2. Set aside for 30 minutes to stabilize the texture.
3. Pre-heat an electric waffle maker. Set the heat level between 2-3.
4. Once the temperature reaches 180C, pour the batter in the waffle maker tray. Let it cook, then flip to the other side to cook.
5. Ready to serve.
